Tuesday 2/9/10 - Birthday Dinner

Today is Jack's birthday so I decided to make him two of his favorite things 1) Taco Lasagna & 2) Avacado Dip.   As I was making these things, I was taking pictures to post.  He thought I was crazy taking pictures. He said, "I sure hope there's a reason WHY you're taking pictures of the food you're preparing."  I told him I was going to post them on the blog.  These recipies are too good not to share with everyone.  Some of you have the avacado dip recipe because my mother in law makes this.  Jack loves it so much, I make it for him occasionally.  The taco lasagna recipe I got from a lady I used to work with.  I've shared it with a lot of people and I've yet to hear a complaint about it. It's pretty simple to make and can even be made up the night before.  I made up the name...it's really called Taco Casserole, but I like Taco Lasagna better...lol.  It's layered like lasagna.   So, without further hesitation, here's the recipies:


Take 2-3 avacados (depending upon how big they are) and 1-8oz block of cream cheese and put them in a bowl...

and blend until smooth.  I mix mine with an electric hand blender.  Makes it really creamy!  Jack agrees that this makes it taste better than just mixing it up with a fork. 

Once blended, spread mixture on a plate


Then add shreaded lettuce, green onion, cheddar cheese and tomato.  I was running out of time to chop up tomatoes so I put some of my homemade salsa on it instead.  This is oh so good!  YUMM-O!

I don't have exact measurements.  I put as much stuff on it as I want or til it looks good.  I have to make Jack his own cause he'll die if he eats tomatoes. :) 

Avacado Dip:
2-3 avacados
1-8 oz block of cream cheese
shredded lettuce
green onions
cheddar cheese
tomatoes
salsa
I've even added fresh jalapenos too before.  Makes it spicy and gives it a kick!

It looks messy, but the first piece is always the hardest to get out.  I usually have to double my batch so we have leftovers!  This goes over really well at my house. 

Taco Lasagna Recipe:

1 lb lean ground beef
1 small onion,chopped
1/2 tsp garlic powder
1 envelope taco seasoning mix
1 can (8oz) tomato sauce
1 cup light sour cream
1 cup light cottage cheese
2 cups crushed tortilla chips
2 cups shredded cheddar or Monterey Jack cheese

*Preheat oven to 350 degrees. Coat 2 1/2 quart casserole dish with nonstick cooking spray. 

*In large skillet, brown ground beef.  Remove from heat.  Drain any excess liquid.  Add onion, garlic powder, taco seasoning and tomato sauce.  Mix well.  In medium bowl, combine sour cream and cottage cheese.

*Place half the crushed chips in bottom of prepared casserole dish. Add enough meat mixture to cover chips, then cover meat with half the sour cream mixture and sprinkle with half the shredded cheese.  Repeat layers.  Bake in preheated oven 30-35 minutes until cheese melts and casserole is heated through. Makes 4 servings.
