Friday 3/19/10 - Roasted Carrots

I don't know about you, but I absolutely LOVE carrots.  I'm not crazy about raw ones.  I'm more for the cooked kind.  I've never cooked carrots besides in a roast.  Well, I didn't feel like making a roast today so I wanted to see how they would taste if I roasted them.  I figured, "what the hey".  I roasted brussel sprouts so why not carrots?  I took pictures and documented  how I made them in case anyone was interested.  They turned very yummy!  Even Jack liked them.  He's not a fan of cooked carrots...he's more of the raw type.  Here's how I made them...

The seasoning I used was black pepper, crushed thyme and sea salt. 


I cleaned up my carrots.   I used up a whole 1 lb bag.


I HATE peeling carrots.  It's so time consuming. Time is very valuable around our house.  If you wash and scrub them up real well, you won't have to peel them.  That's what I do.


Slice them in half (be careful not to cut yourself.  This part was really tricky for me) and lay them evenly on a cookie/baking sheet.  I lay foil down for easier clean up.


Then brush them real well with a little EVOO (extra virgin olive oil)


Season them with as much or little of the salt, pepper and thyme as you'd like


Then put them in the oven at 400 degrees for 30 minutes.  I checked mine after 20 minutes and they were done.  I will most likely lower the temp. to 350 next time for 30 minutes.  (on top is the homemade mac and cheese Jack and I made for dinner too).  I'll post that recipe for that soon.


The finished product!  I wanted to serve a different vegetable than what we normally have for dinner.  We're stuck in a rut eating either green beans, corn or peas.  I thought roasted carrots would be a nice change for once.  Jack thought they were pretty good.  That means I'll get to make them again!  YEAH!!!


I bought some asparagus to try this way next.  Can't wait!  YUMM-O!!
