Monday 3/29/10 - Salmon w/Dill Caper Sauce & Roasted Asparagus

I'm sure by now you're probably thinking, "My goodness!  This woman's gone mad for sure!  Is this Brianna and Jacob's blog?"  No, you haven't stumbled upon an alternate blog.  You've got the right one...hehe.  I've discovered, in my opinion, some great recipes that I wanted to share with all of you.  Angie, I wanted to let you know that I did some research about the Mango Salsa you suggested.  I found a few simple recipes I wanna try out.  When I get around to making it, I'll post it on here for ya. 

I wanted to ask all my faithful blog stalkers a question.  It has been brought to my attention by a number of you that you would like me to start up a food blog.   I wanted to know if you thought I should create a blog specifically for food or just post everything on this one, like I have been.  Your input would be greatly appreciated.  You may either leave a comment on this post or you may email me.  I'm interested in hearing what you all have to say.  I'm unsure about starting another blog only because I have such limited time.  I'll make a decision once I hear from you guys/gals.  Your opinions are welcome!

 I don't know if you've noticed a slight change I've made to our blog a few days ago.  After much thought, I decided to change the name of our blog to "Welcome to Our Side of the Fence".  I thought it was more appropriate since I post more things than just my kiddos.  I'm always asking people, "Well, how are things on your side of the fence?  Things on our side are..."  I don't know exactly when or why I started saying this (maybe living in the country, sniffing the pollen filled air, pig manure and fresh plowed dirt over the years has finally gotten the best of me).  Just thought I'd throw that out there and bring it to your attention, in case you didn't notice. 

Well, I'll stop blabbing and get on with posting the recipes! 


The simple line up for this recipe is:

*Salmon Filets
*Butter
*Salt
*Pepper
*Asparagus

Amounts vary depending upon how much you want to make


I had a package of salmon I found in my freezer (good thing I cleaned it out the other day) that I used. After thawing,  I placed the salmon on a foil lined baking sheet.  Then I took a stick of butter and sliced 3 pieces of butter for 3 pieces of salmon.  I seasoned with salt and pepper.  Preheat your oven to 400 degrees.  Bake salmon 20-30 minutes, depending upon the thickness of the filets.  I cooked mine for 20 minutes.


I cleaned the asparagus, placed it on a foil lined cooking sheet, drizzled EVOO and seasoned with salt and pepper.  I also roasted these in a 400 degree oven for 20 minutes...


They turned out like this...yum yum.  Delish.


We also fixed broccoli cheese rice, but that was out of a package.  Nothing fancy.  I noticed that I forgot to get a picture of the Dill Caper Sauce on the salmon.  You'll just have to take my word for it...it was REALLY yummy.  :)  I musta been starvin' to forget about takin' pictures for my blog.  Hehe.
