Sunday 3/28/10 - Homemade Salsa

This is my homemade salsa recipe that I make all the time.  Salsa is one of my favorite things to eat!  Isn't it one of the food groups?  LOL.  If it's not, then it should be. There are so many ways to make it and jazz it up a bit.  Since I was drinking a margarita while cooking, I thought, "What better to go with this than some salsa?"   I know I posted a picture of my salsa AFTER I had made it a few months ago, but I don't think I put the actual recipe on here.  I know some of you make your own salsa, but I love looking at other peoples' recipes of the same thing.  It's fun to see all the variations of how the same thing can be made.  I could look at recipes all day long!

Now, let me get one thing straight here.  Normally I use FRESH tomatoes when making my salsa.  For some reason I forgot to get them when I went to the store earlier today.  Luckily I had a can of diced ones in my jelly cabinet.  PHEW!   That was close.  This way turned out just as good.

The line up for Salsa:

28 oz can diced tomatoes (I normally use 4-6 large tomatoes)
1/2 large white onion diced small
1 tsp minced garlic (from a jar)
3 tsp diced jalapenos - jarred can be used as well (I used 2 fresh ones left from my rellenos)-this can be adjusted to your liking
a handful of cilantro, chopped

*put in blender or food processer to blend ingredients together

28 oz diced tomatoes

I put more onion in that what's called for.  I love onions!

Cut tops off jalapenos and slice

Put in food processer.  I usually use more than 2 peppers, but that's all I had.

1 tsp minced garlic

I had to pulse the tomatoes, onions and peppers for a few seconds to make room.  Plop the minced garlic right on in there too.  Go ahead...it's okay.  You could use more or less depending upon your preference.

Next comes the yummy cilantro!   Love, Love, Love it! Cilantro is my new best friend...lol.

Voila!  Now you've made some yummy salsa!  Try some today.  :D
