It was getting late and I was running out of time and ideas for dinner. I had a pound of ground chuck in the fridge that I wanted to make something out of, but something different that I had never made before. It had to be quick and something that EVERYONE would eat. That in itself can be challenging! I thought I could make homemade meatballs for spaghetti. Unfortunately, I'm not able to make the sauce homemade because that would require onions, tomatoes, peppers, mushrooms...you know all the stuff Jack says he will DIE from if he were to ingest just a teeny tiny piece of any of that...lol. I tried to reassure him that he wouldn't die (I'm still here after all these years), but I've never seemed to convince him in the 15 1/2 years I've known him. I googled meatball recipies and found a simple one that sounded pretty good. I thought I would share it with all of you. I know some of you reading this are awesome cooks and have been so kind over the years to share your recipies with me (Phyllis-you come to mind first and foremost). You all may have your own recipies, but even Jack said he liked this better than the ones I buy from the store. I will be using this recipe from now on. I will make my meatballs and freeze them. They were VERY good!
These are some of the ingredients that were called for. One reason why I decided to use this recipe was that I had all of them on hand. The only thing that isn't pictured here was the ground chuck. This recipe calls for 1 lbs of ground beef. I had a little less than that to use.

I took some angel hair pasta I had (I LOVE angel hair the best)...
and boiled it for 7-8 minutes. I like angel hair because it cooks faster.
While my pasta was cooking, I put some garlic breadsticks in the oven. I sprinkled parmesan cheese over the top to give a little extra cheesy flavor to them.
This was the sauce I made tonight. I followed the directions on the back. It calls for 1 3/4 c of water, 1-6oz can of tomato paste and this seasoning packet. It doesn't have any of the stuff that would make Jack "die" so I figured I was safe! This sauce tastes a lot like the Hunt's Spaghetti sauce I love so much. I've had Ragu and others that just don't cut it with me. I like my sauce to be tangy! I'm a saucy/tangy kinda gal!

Meatball Recipe
Ingredients:
*1# lean ground beef
*1 cup fresh bread crumbs (I used Progresso in a canister)
*1 tbsp dried parsley
*1 tbsp grated parmesan cheese (again, I used the refridgerated version)
*1/4 tsp ground black pepper
*1/8 tsp garlic powder
*1 egg, beaten
1) In a large bowl, combine ground beef, bread crumbs,parsely, parmesan cheese, 1/4 tsp black pepper, garlic powder and beaten egg. Mix well and form into balls.
2). Place meatballs on an oven pan evenly spaced out. Place in pre-heated oven at 350 degrees for 15-20 minutes (time varies per oven).
