Saturday 3/27/10 - Chicken Pasta Salad

Here's a new recipe I discovered a few weeks ago.  I finally got around to making it today.  It was pretty good.  Of course, Jack wasn't sure what to think of it since it had veggies in it.  Remember, consuming any vegetable other than potatoes, corn, green beans, etc. would involve death for him.  Atleast that's what he tells me anyway.   I'll be able to tell more tomorrow for sure, after it sits for about 12 hours, if I'm gonna like it.  Anyway, if your curiousity has peeked, I'll let you know how I made this dish:


The ingredients you'll need to make Chicken Pasta Salad is: 

1 packet (1-oz) dry ranch dressing mix
1 packet (1-oz) dry vegetable soup mix (I used Knorr)
1 cup mayonnaise
1 cup milk
1 package (12-oz) twisted pasta, like rotini
3 boneless, skinless chicken breasts, cooked and chopped
1 package (8-oz) cheddar cheese, shredded


In a large bowl, mix together the first 4 ingredients (ranch dressing mix, dry veggie soup mix, mayo and milk).  Let sit to soften the dried vegetables while pasta is cooking.



Boil your pasta for 8-10 minutes or according to package directions


Drain and rinse until cool.


Cook your chicken (I used salt and pepper for seasoning)


I broiled my chicken breasts for 10 minutes (5 minutes per side).  You'll need to adjust your timing according to thickness of the chicken.  These were pretty thick.

Chop chicken into bite size pieces, set aside.


Next add Chicken 


Cheese


And pasta to mixture and stir all together til well blended.


VOILA!  Chicken Pasta Salad!  ENJOY!
