I've been meaning to make this recipe for a while now. I've had 2 lbs of stew meat that I bought with the intentions of making beef stew. I decided to finally make it today. It sounded easy, but there is some chopping of veggies that can be time consuming. I thought I'd give it a try anyway. Since we were going to be gone all day tomorrow, I thought this would be something that could be warmed up for dinner.
This is the line up for this recipe:
*2 lbs beef stew meat, browned
*12 potatoes, peeled and cubed
*1 lbs carrots, peeled and cut into coin sized pieces
*1/2 cup onion, diced
*2 packages of onion soup mix
*2 cans of peas, drained
*2 cans of corn, drained
*2 cans of green beans, drained
*salt and pepper to taste
**This recipe made WAAAY to much! I would only use 6 potatoes and a can each of the peas, corn and green beans. I had so much stew, I couldn't get my crock pot lid to stay on. I had to use TWO crock pots! I would still use 2 lbs of meat and 1 lb of carrots though.
It NEVER fails that THIS always happens when I'm trying to cook something.
Wash your carrots before chopping them up. I scrub and wash mine real well so I don't have to peel them. This saves me a lot of time.
Chop them into coin size pieces
After chopping your carrots, place them in the bottom of your crock pot or you can use a dutch oven.
Next, you'll need to brown your stew meat. I also seasoned them with salt and pepper, to taste. I browned my stew meat on medium heat. I also used a tbsp of oil to coat the pan before putting my meat in.
While my meat was browning, I peeled my potatoes. I put them in a large bowl of cold water to keep them from turning brown. You want you meat to brown, NOT your taters, people.
After your meat is browned...(I didn't need to drain my stew meat because it was lean. If you use some that isn't, then this is where you would need to do this)
Place it in your crock pot on top of the carrots.
Salt and pepper didn't do it for me, so I decided to use some seasoning salt. That always tastes good on meat!
I added 1 tsp of seasoning salt to the stew meat
Next, dice your potatoes into 1 inch chunks
Then place them on top of the stew meat in the crock pot
Open your cans of green beans and drain the liquid.
Place them on top of the taters...(notice how full my crock pot is getting at this point)
Open your cans of peas and drain all the liquid out
Place the peas on top of the green beans (it's almost to the top! We're not done yet!)
Open cans of corn and drain liquid from them too
Pour the cans of corn on top of the peas
Chop up your onion and put it right on in there on top the corn. I forgot to take a picture of the cutting of the onions. My eyes were watering so bad, I had to chop FAST! I also cut my onion up bigger than the recipe said to. That was so "you know who" could pick it out...lol.
Next, mix 2 packages of onion soup mix (as directed on the box/package)
Then pour it over all your veggies. Turn your crock pot on high for the 1st hour. Then turn it to the lowest setting and cook for 6-8 hours or until all your veggies are cooked and heated through. Mine took longer because my crock pot was so full. I had to use two pots!
We ate our stew for dinner tonight, after we got home. I like mine spicy...Jack doesn't. So, I used some Sriracha HOT chili sauce in mine. OMG...if my taste buds weren't burned off before, they DEFINATELY are now. Holy cow! This stuff is HOT! I LOVED it though! This stew was very good. I'm not really a stew kinda gal, but this was something different to try. Unless you're feeding an army or your family eats like an army, I would suggest cutting back on this recipe for sure. If you don't, you'll be eating stew for a week or so! I will use this recipe again, but I will cut back. Especially on the canned veggies. It really wasn't necessary to have that much in there. It was more like vegetable soup instead of stew. Oh well! It's good for ya too! A Bonus!
