Saturday 4/10/10 - Mayonnaise Chicken

This recipe was in my "to try" pile.  I thought it sounded interesting enough to try as well and thought it would go great with my tater tot casserole I was making.  I also had all the ingredients so it was an easy decision to make.  My kids love chicken so an additional bonus!   The name "Mayonnaise Chicken" kinda freaked me out at first, but I got over it real quick.


The line up for this recipe is:


*4 boneless, skinless chicken breasts (I cut mine into strips)
*6 Tbsp Miracle Whip
(I have no idea why they call this Mayonnaise chicken when it calls for Miracle Whip. I'm more of a fan of Mayo, myself, but again, just trying to follow the directions here)
*3 Tbsp lemon juice
*1 Tbsp each:  salt, pepper and sugar
(Actually, I would cut the pepper down to only 1/2 tsp here.  I only used 1/2 tbsp and it was STILL VERY peppery.  Too much for little ones)


First, I cut my chicken breasts into strips (makes it easier for little fingers to hold :D)


Mix all ingredients together in a bowl...Miracle Whip


Lemon juice, salt, pepper and sugar


All ingredients mixed together.  Again, I think this called for way too much pepper.  I even cut it down by half.  I would even cut it down more next time.


Dip pieces of chicken into mixture.  Make sure you coat each one well.


Place coated chicken in a glass oven proof dish large enough to hold all of chicken.


Cover chicken with foil


Bake covered at 350 degrees for 45 minutes. I thought this would be too much time, but it actually wasn't.


Remove cover and cook until slightly browned.  I just realized I didn't do this part...oops!  It still turned out great.  This chicken was so tender and juicy!  AND incase you're wondering...it didn't taste like Miracle Whip at all!  What a relief!


If you're in a hurry, you can mix all ingredients together in the dish you're going to cook it in and stir in chicken.   Well, due to this not being in the shape of a chicken nugget, my kids wouldn't touch this either.   Jack and I thought it was very good.  I had a lot of left overs that I gave away to my momma to try.  It's something different and easy.  Go on...try it!  I dare ya!  


I almost forgot to post the finished product!  Here is the Mayonnaise Chicken with the Tater Tot Casserole.  The adults liked it,  the kids...not so much.  If you have picky kids, they may or may not like this. I thought for sure my kids would. Well, that's what I get for thinkin'!
